Bacon & Cola Crock Pot Roast

This is a super yummy dish that is super easy to make. I honestly had never used my crock pot before this recipe. Never knew how easy they were to use! I can never find the dry onion soup mix, so I use the dry onion gravy mix instead. I personally also use the mushroom soup, but that is because I cannot stand celery.

Ingredients:

1 (3-4 lb) bottom round beef roast
1 (12 ounce) can cream of celery or mushroom soup (whatever your preference)
½ lb bacon , cooked and crumbled (reserve drippings)
3 -5 tablespoons bacon drippings
1 (1 ½ ounce) package dry onion soup mix
1 (12 ounce) can Cola
1 tbsp corn starch and 1 tbsp water mixed

Directions:

  • Pour 1 can of Cola into your crock pot and set temperature to low.
  • Place your Beef Roast in the crock pot and sprinkle the Dry Onion Soup mix over roast and the cola
  • While cooking the roast on low, fry the bacon to a crisp, crumble it and set aside.
  • Pour the bacon drippings from cooking the bacon and drizzle them over your roast.
  • Spread the bacon crumbles over your roast and dry onion soup mix.
  • Cover roast and cook on low for 6-8 hours, or 4-6 hours on high.
  • One hour before roast is to be served make your gravy.
  • Lift roast out of crock pot and set aside.
  • Add your one can of Cream of Celery soup and hand whisk until blended. For time’s sake I use the electric mixer.
  • Add corn starch and water mix and whisk in to thicken.
  • Place your roast back into the crock pot and finish out your cooking time.

Stromboli

Love this! I actually ended up using the Pillsbury croissants because I bought the wrong kind of pizza dough and it tasted amazing! I did exactly the same thing with the croissants except because they are "pre-cut" I molded it all together to make one dough. I also use oregano seasoning instead of fresh oregano.

Ingredients:

1/2-lb. of ground sausage
Approximately 24 pieces of pepperoni
1 (13.8-oz.) can of Pillsbury refrigerated classic pizza crust
1/3 cup of pizza sauce
1 cup of shredded mozzarella cheese
Light sprinkle of oregano leaves

Directions:

  • Preheat the oven to 400 degrees Fahrenheit. Cook the sausage to brown it in a skillet over Medium heat. Be sure to drain the grease and then set this aside.
  • Break out a cookie sheet and grease or spray it so the dough will not stick to it. Unroll and spread out the dough over the greased cookie sheet.
  • Spread the pizza sauce over the dough but be sure to leave 2 inches on the long sides and 1/2 inch on the short side bare. Place the cooked sausage in the center of the dough where the sauce is. Top this with the pepperoni, mozzarella cheese, and oregano. Fold the dough over the fillings starting with the short sides then the long sides. Be sure to pinch the dough closed so that it is sealed.
  • Bake this in the preheated 400 degree oven for approximately 15-20 minutes or until the crust has turn golden brown.
  • Once the Stromboli has been cooked, let it cool for a few minutes since the insides will be very hot. This will serve between 4-6 people and is very easy to make with your kids. Please feel free to add or remove any of the ingredients to make this special for you and your family, just be sure to make the portion of the ingredient enough to fit in the Stromboli.

Four Ingredient Pizza Bake

I like to make my own pizza sauce with this! You can also add your favorite pizza toppings to the layers. Try cooked sausage crumbles, chopped green bell pepper, onion or olives. We add bacon!

Ingredients:

2 and 1/4 cups Bisquick®
1 cup water
1 jar (14 oz) pizza sauce
1 package (8 oz) sliced pepperoni
2 cups shredded mozzarella cheese

Directions:
  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  •  In medium bowl, stir Bisquick and water until soft dough forms.
  • Drop half of dough by spoonfuls evenly in bottom of baking dish (dough will not completely cover bottom of dish).
  • Drizzle about 1 cup pizza sauce over dough. Arrange 1/2 of the pepperoni slices evenly over sauce.
  • Top with 1 cup of the cheese.
  • Repeat layers with remaining dough, pizza sauce, pepperoni and cheese.
  • Bake 20 to 25 minutes or until golden brown. Cut into squares to serve.

Shepard's Pie

With the carrots, I mash them to oblivion because of the "texture" issue with my husband. I also don't use onion flakes, I use onion powder.

4 cups hot mashed potatoes
1/4 teaspoon black pepper
1 teaspoon onion powder
8 oz. shredded cheese

Directions:

  • Preheat oven to 350 degrees F.
  • In a large bowl, mix together the oats, milk, egg and bouillon. Add the parsley, onion flakes, pepper, thyme, beef and carrots. Mix well.
  • Place this mixture into a pie plate and bake for 45 minutes.
  • While the beef mixture is baking, mix the onion powder and 1/4 teaspoon of black pepper with the mashed potatoes.

Baked Ziti

The only thing I change in this recipe is the chopped onion. My husband doesn't like the texture of onions...he says they are crunchy and soft at the same time...so I use onion powder instead. I use roughly 1 table spoon in this dish. I add it to the ground beef once it has finished cooking in the pan and make sure it is mixed in really well.

Ingredients:

1 pound dry ziti pasta
1 onion, chopped
1 pound lean ground beef
2 (26 ounce) jars spaghetti sauce
1 1/2 cups sour cream
6 ounces provolone cheese, sliced
2 tablespoons grated Parmesan cheese
6 ounces mozzarella cheese, shredded

Directions:

  • Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
  • In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
  • Bake for 30 minutes in the preheated oven, or until cheeses are melted. Serve with a tossed salad and buttered italian rolls.
